This episode was inspired by the Ganja Mama and listener Steve. I loved the the Ganja Mama’s lunch and how she used infused butters & sauces as a means to allow guests to medicate themselves during the meal. Then Steve emailed to say that he too, would love to see recipes like this on the show. It seems the people have spoken and an infused maple butter is a great place to start! Quick, easy and tasty, I used a potent cannabis oil to infuse this butter and keep the taste true.

03:42 But I did intend attend that lunch for the Ganja Mama. I shouldn't say for the Ganja Mama. I attended that lunch hosted by the Ganja Mama and Kelly's Green Lounge.
03:52 And it got me thinking about toppings. And of course it also coincided with a lead listener Steve. Shout out to Steve for making this suggestion. And I'd already been thinking it but it's over now.
04:03 It's always nice to hear that listeners are also thinking the same thing and are on the same page as you.
04:08 And Steve was saying, why don't we get into some of these toppings too? Because as I've been doing and learning and talking to more and more cannabis chefs and enthusiasts, I've really found that toppings are how many of them like to infuse their dishes.
04:30 And when I say toppings, I mean drizzles, condiments, butters, sauces, all these types of things where you're not necessarily cooking the cannabis right into the main dish.
04:41 And they're so useful and versatile, I can see why they would do it. As I mentioned, if you haven't listened to this episode where I kind of talk about my afternoon lunch with the Ganja Mama, highly recommend you have a listen because I really liked how she put on the lunch and how she decided to infuse
04:55 the meal, which was doing these, these butters. And she did a caramel sauce too, of course, because she must have known, well, she knew I was coming.
05:03 So, of course, she had to have caramel, right? Because we all know how much Marge loves caramel. Sorry, I'm not going to start talking in the third person, don't worry.
05:11 But she did this lovely maple butter and I thought, you know what, I'm going to try this myself because I happen to love also maple syrup, if you've been listening to this show for any length of time.
05:22 Caramel, maple syrup. Those are my two Achilles heels, probably. I sometimes think that maple syrup is running through my veins.
05:29 I have been known to take a swig of maple syrup straight out of the bottle from time to time and I'm not ashamed of it.
05:35 I'm not ashamed to admit that. But yes, these toppings, drizzles, condiments, butters, all these things, they can be so versatile.
05:43 Hi. Because you can make the dosing customizable. And when you're doing a dinner or a lunch, like the Ganja Mama did, or some of these other chefs that I've interviewed, well, being able to have customization and and precision of dosing at the same time is very important when you are hosting guests,
06:01 because you certainly want to make sure that they're having a memorable experience. And of course, if you're a home cook and you're inviting friends over for a meal and you want to try infusing it, I would actually recommend listening to the episode with Chef Brandon Allen that I did recently.
06:14 I think part two focused on more on hosting and the different uh secrets to hosting people, but you want to make sure they're having a good time too.
06:24 Just because you're having it at your house doesn't mean it's not not just as important to make sure that the people that are dining with you are going to have an enjoyable and memorable experience.
06:33 I did, I did have a party a few years ago now. This would have been pre-pandemic, maybe right before like the year before the pandemic.
06:43 A lot of the times my spouse and I would have birthday parties. We don't entertain a whole ton, but our birthdays were pretty close together.
06:51 They're in June and July and we would often have people over for a birthday party. And one year we did hand out cookies.
06:58 And I can't remember if we gave a caveat of who, of how potent they were, but somebody, we did have a guest and she was experienced with cannabis.
07:07 It wasn't like she had never used cannabis before, but there was the combination of the cannabis and some drinking and that cookie really helped.
07:16 It really put her over the edge and she ended up having a miserable night. Now I think she had drank quite a bit as well, which certainly didn't help.
07:24 Again, the combination of alcohol and cannabis people can be pretty dangerous. It's pretty strong, quite toxic, you have to be very careful because if you've ever done that to yourself, you know that often the cannabis will amplify the effects of the alcohol.
07:37 So if you're smoking a joint for instance, or vaporizing, that's really going to amplify the effects of that alcohol. So if you've had too much to drink already, the weed's not going to make you feel better.
07:48 It's probably going to make it worse. And that's kind of what happened to this young lady, and she did not have an enjoyable evening.
07:56 And that was partly me to blame, because I was the one who made the cookies. Now my spouse was the one to hand them out, but did I have them labeled and say how strong they were?
08:06 I can't quite remember, but it's tough to say. So you always have to be cautious when you're consuming cannabis, and you're sharing them with your friends and family.
08:16 But this maple butter was, I mean, there's still lots of space, even though a lot of cannabis chefs and culinary cannabis enthusiasts, edibles enthusiasts, are moving the direction.
08:28 of sauces and toppings and whatnot. There is, of course, still space for making cookies and baked goods and all kind- and infusing dishes directly and all the rest of it.
08:36 You just have to be conscious of the heat in which they're being cooked, because if it's going to be too hot, like the maple may- the stuffed peppers that I did recently, you put them in the oven at 400 degrees, that's not the dish that you want to be putting your infused oils or butters or whatever
08:49 into, because it's probably going to be too hot, and you're going to lose a lot of cannabinoids in the baking process, because it's hot.
08:55 Now, 400, you might be sort of on that line, but anything over that, it's going to be too much, and that's where having a nice drizzle of something or a sauce or a dip or something to go along with it is going to allow you to medicate that dish without having to lose cannabinoids and that's wasteful
09:11 and all the rest of it, so I see why people are moving this direction more and more. So the great thing, thing about this maple butter recipe is how easy it is, and you know, if you're anything like me, and that's probably why you're listening to this show, you like simple, and because we're all busy
09:27 , and sometimes you know you want to take on a bigger project, and sometimes you just want something that's pretty easy to put together in a sentence.
09:33 And essentially, what you do is you take butter, and you take maple syrup, and you combine them. Now is there a little bit more to it than that?
09:40 No, not really. Actually, there's, there's not a whole lot more to it than that. Now you want the butter softened, and it does suggest the darkest grade of maple syrup that you can get.
09:53 I actually went out and bought a specific bottle of maple syrup. I was running low anyway, but of course I'm definitely going to be consuming it all eventually.
10:01 But I did go out and get the darkest grade. If you don't have it, and you want to just use what you have on hand, you could do that too, but it's just going, the maple syrup flavor is going to stand out more if you get the darker grade.
10:14 And so you have your half cup softened butter and a quarter cup of maple syrup. Then you mix it. I put mine in my stand mixer.
10:24 And I blended it until fluffy and then I put it into a dish and that was it. They do suggest if you want you can roll into a tube shape to make it look kind of buttery.
10:33 With some parchment paper. And then you chill it. But that's obviously totally optional. And I skipped that part because I didn't have time the day that I was doing it.
10:43 And that's it. That's what's so great about this. Now of course you could infuse this by using a ratio of infused butter.
10:51 But what I ended up doing actually was using like a canvas. And adding it to it and did it that way.
10:57 And I used like in my case an RSO that I bought from a legal dispensary in this particular instance. Or concentrate.
11:04 And then I measured it. Measured it out, added it in and then I could calculate how strong this butter was based on what I put into it.
11:12 But you could do the root of. The cannabis butter. It just might impart a flavor. The one reason I like doing it with the concentrate is because you're not going to get that.
11:21 That green flavor. Cause I'm not sure that the maple syrup is going to be strong enough to really mask the cannabis flavor.
11:26 If you don't mind that of course then that by all means try that method out as well and see how it works.
11:31 But I used to concentrate for this particular one. And that's how the ganja mama did it as well. When she was infusing her butters as she used concentrates too.
11:41 Just because she was looking for that super accuracy and precision of dosing. And of course you can make as much or as little as you need.
11:49 I did the full half cup. It's probably going to be quite a bit and it'll last quite a while. Umm, but if you just, actually you know what, I only made a quarter cup.
11:59 And it seemed to make a- obviously it seemed to make a disc. I had a quarter cup of butter. And then I added the eighth of a cup of maple syrup because I didn't think I needed that much infused maple butter.
12:09 And of course if I want to make more down the road it's so easy to put together then it's something you can whip up.
12:14 And like a very short amount of time. And it's super versatile. The nice thing about having a butter like this is you can use it on pancakes, toast, waffles, crepes, hot biscuits, french toast.
12:30 For those of you who are into like the bulletproof coffee type thing you might be able to put a in there.
12:35 Now of course the maple syrup has sugar so maybe that's not necessarily something you want to do but if you want to do a buttery coffee or tea of some kind then and parts nice maple flavor then you could do that too.
12:45 Um the recipe that I found online actually has what do we have here? Here go. A few suggestions of variations and ways to use it.
12:58 One of the ones I really like is that you could use it on breads like banana breads or pumpkin breads, toasted muffins.
13:06 I didn't really think about that. Uh they suggest you could use it on roasted butternut squash which actually sounds really nice.
13:13 Baked or sweet mashed petit- potatoes. I think it could be really nice with the sweet potatoes. Corn bread. So there's a lot of different ways to eat it.
13:22 You could use this one actually and it might be nice even on like a charcuterie board or something. Something to that effect.
13:28 They do have a few variations, but personal- because you could take this recipe and do other things, but they're safe.
13:35 So if here as far as variations go, you could add maybe a bit of cinnamon or ground pumpkin pie spice or ground ginger or cloves.
13:45 That kind of thing. If you wanted to try. Try that along with the maple syrup. So you've made this butter and now you're thinking okay, how do I store it?
13:54 I just keep mine in the refrigerator. It says it'll keep for up to six months according to the website that I got found the recipe.
14:01 You can also freeze it in a sealed container. So if you make a bunch of it and you think there's no way I'm going to consume this in a timely manner.
14:09 Then you can just freeze some of it and I think that's fantastic. Now they're also suggesting you can freeze it in ice cube trays and then you can transfer it to ziploc freezer bags after it's frozen.
14:21 If you're looking for small increments because you don't need a whole lot and when it comes to an infused maple butter like this, having it in small increments is pretty probably preferable anyway.
14:30 So you can just pull it out of the freezer and use it when you need it when you want it and not have to worry about keeping it.
14:38 This says in the freezer it'll last for about a- year in a sealed container. So a lovely little butter recipe that you can use to help add a little something special to your breakfast if you like and enjoy that the effects of having that in the morning.
14:57 Of course, breakfast for dinner is never a bad idea and maybe I'm gonna have to try that soon. I love making pancakes too.
15:06 I really do. I prefer pancakes myself over waffles or what else do people you should make? French toast. I do like French toast sometimes because it's pretty easy to- to put together when you're in a pinch but I love making pancakes so I'm gonna have to try this and breakfast for dinner is never a bad
15:22 idea so. Right puts you into a bit of a coma, you'll have to go for a post-prand deal afterwards but it's another- another fun way to medicate yourself for the time of day that- suits you best.
